Scentsy Consultant Recipe: Banana Nut Bread

I would grab a slice, spread some butter on it and that first bite would be so delicious. What a great snack to come home to! I am also going to give you my favorite Scentsy consultant recipe for Banana Nut Bread, but before I do, let’s take a look at some interesting facts about it.
Banana nut bread didn’t develop into a widely used bread until the 1930s. Its popularity corresponds with the common use of baking powder by bakers as a fast leavening ingredient for quick breads. In the 1960’s, Banana bread benefit from a rebirth as many recipes were included in cookbooks used by housewives. Banana bread is so popular now, that February 23rd is National Banana Bread Day.
The banana’s beginning is thought to come from Southeast Asia. The Greeks knew about the banana plant and Pliny wrote about bananas in 77 A.D. Non-leavened breads go back as far as 7,000 years, so a combination of bananas and bread could be very old, although there is no written proof of this early connection.
Scentsy Consultant Banana Nut Bread Recipe
Items Needed
2 1/3 cups mashed overripe bananas (about 3 Ripe Bananas, the riper, the moister the bread!)
2 large eggs, beaten
2 cups all-purpose flour
1/2 cup (1 stick) room temperature
1 cup sugar
1/2 cup brown sugar
1 tsp. baking soda
1 tsp. vanilla extract (optional)
1/2 tsp. salt
1/2 cup chopped walnuts
What to do
- Preheat oven to 375°F and lightly grease two 9×5 inch loaf pans.
- Sift flour, baking soda and salt together in a large bowl.
- In separate bowl, mix together the sugar, brown sugar, butter, eggs and vanilla. Blend in flour mixture, and stir until smooth.
- Mash bananas with a fork and stir into batter until well blended. Then add nuts and stir well.
- Pour batter into prepared loaf pans.
- Bake for about 60 minutes or until a toothpick comes out clean and dry.
- Let bread cool off for about ten minutes and then remove from baking pan.
